DJ's Half-Hippy Chocolate Chip Cookies

Ingredients

These cookies are my staple, I make them all the time and people are crazy about them. The combination of the nutty cacao nibs and apple sauce give these cookies an almost banana-ey flavor, which complements the chocolate well. I also like to add cayenne pepper for a little kick.


  • 1 cup wheat flour
  • 1 1/2 cup white flour
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup (1 stick) butter
  • 1/2 cup apple sauce
  • 1/8 cup ground flax seeds (optional for you real hippies out there)(1)
  • 8oz chocolate chips (or 12, or whatever)
  • 1/4 cup cacao nibs (2)
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Dash of cayenne pepper (optional but tasty)
  • Dash of nutmeg (optional. I put it in but I can't taste the difference)


(1) For true Omega Fatty Action, grind your own flax seeds in a thoroughly washed coffee grinder. Some of us keep one around for that explicit purpose.

(2) These are little bits of cocao bean that are the size of those nerd candies. They're nutty and tasty and really good for you.

Instructions

Preheat the oven to 375 if you've got one of those electric ovens that takes forever. If you've got a gas oven then don't sweat it, they heat up in like a minute.

Nuke the butter for like a minute 'till it's nice and soft. Mix in the two sugars. Add baking powder, vanilla, apple sauce, salt, flax seeds and the two flours. Crack the two eggs on top and stir until everything is even. If the mixture seems too thick, add more apple sauce. Add cinnamon, cayenne and nutmeg to taste. Then mix in chocolate chips and cacao nibs. Do the whole fresh cookie dough deal before the salmonella kicks in, then make ball and place on an oiled baking sheet.

There's an art to this. Some people do a dozen small cookies per sheet, I'm a fan of six gigantic ones. A gigantic cookie is a powerful symbol of love and friendship. Just sayin', consider it.

Bake for 9 minutes (small cookies) or 12 minutes (large cookies) or until the inside of the cookie no longer looks liquid. Place cookies on a cooling rack before serving. Then take the rest of the cookie dough and stick it in your fridge. You can keep baking fresh cookies on demand for about a week.
