This recipe is part of the AVEN Cookbook

These pancakes are really good and surprisingly vegan! I mastered this recipe when I hosted get-togethers for all of the queer kids in college, now I throw brunches about once a month to get my community based intimacy on.

Ingredients

1/2 cup Buckwheat Flour

1 cup Whole Wheat Flour

1 cup White Flour

1 1/4 cup water

1 1/4 cup soy milk

1 tsp cinnamon

2 tbs sugar

2 tbs baking powder (not baking soda)

2 tbs canola oil

Preparation

1) Mix everything together and cook! Add flour/water to control for thickness, and feel free to add fruit and chips. Upping the soymilk/water ratio makes pancakes creamier and thicker.
